Stuffed Mushrooms with Parsley

Ingredients

  • About 24 medium sized mushrooms (stems removed & saved)

  • 1 egg

  • 2 Tbsp Gourmet Garden Parsley
    Add to Shopping List
  • 2 Tbsp extra virgin olive oil
    Add to Shopping List
  • 1 Tbsp capers (drained & chopped)
    Add to Shopping List
  • 1 Tbsp Gourmet Garden Lemon Grass
    Add to Shopping List
  • ½ cup Italian style bread crumbs
    Add to Shopping List
Method SERVES 24

Step 1
Turn the mushrooms upside down on a slightly oiled baking sheet.

Step 2
Finely chop the saved stems and add the rest of the ingredients mash together to form a smooth paste.

Step 3
Spoon the mixture into the mushroom caps and place under a broiler until golden brown, serve.
