Gluten Free Turkey Meatloaf.
- 1 Tbsp vegetable oil
- 1-1/2 cups chopped onions
- 2 stalks celery, chopped
- 2 cups baby spinach, coarsley chopped
- 1 14.5 oz. can whole tomatoes, drained, coarsley chopped
- 1-1/2 lbs lean ground turkey
- 1 cup gluten free oats
- 1/2 cup water
- 1 egg
- 1/2 tsp black pepper
- 1 Tbsp Gourmet Garden Garlic
- 1 Tbsp Gourmet Garden Parsley
- 1 Tbsp Gourmet Garden Basil
- 2 Tbsp ketchup
Heat 1 oil in medium skillet. Add onions and celery; cook 12-15 min. or until very tender. Stir in spinach and chopped whole tomatoes; remove from heat. Let cool.
Step 2
Combine lean ground turkey, gluten free oats, water, egg, black pepper, Gourmet Garden Garlic, Parsley and Basil with vegetable mixture. Mix thoroughly.
Step 3
Transfer to lightly spray loaf pan (9x5). Bake 50 minutes in 350 degree preheated oven. Brush with 2 tbsp. ketchup. Bake 10 min. Cool. Slice and serve.
