Turkey Meatloaf with Garlic, Parsley & Basil

Gluten Free  Turkey Meatloaf.

Ingredients

  • 1 Tbsp vegetable oil

  • 1-1/2 cups chopped onions

  • 2 stalks celery, chopped

  • 2 cups baby spinach, coarsley chopped

  • 1 14.5 oz. can whole tomatoes, drained, coarsley chopped

  • 1-1/2 lbs lean ground turkey

  • 1 cup gluten free oats

  • 1/2 cup water
    Add to Shopping List
  • 1 egg
    Add to Shopping List
  • 1/2 tsp black pepper

  • 1 Tbsp Gourmet Garden Garlic

  • 1 Tbsp Gourmet Garden Parsley

  • 1 Tbsp Gourmet Garden Basil

  • 2 Tbsp ketchup
    Add to Shopping List
Method SERVES 6

Step 1
Heat 1 oil in medium skillet. Add onions and celery; cook 12-15 min. or until very tender. Stir in  spinach and chopped whole tomatoes; remove from heat. Let cool.

Step 2
Combine lean ground turkey, gluten free oats, water, egg,  black pepper, Gourmet Garden Garlic, Parsley and Basil with vegetable mixture. Mix thoroughly.

Step 3
Transfer to lightly spray loaf pan (9x5). Bake 50 minutes in 350 degree preheated oven. Brush with 2 tbsp. ketchup. Bake 10 min. Cool. Slice and serve.
