Wild & Brown Rice with Lemon Grass & Parsley

Gluten Free Holiday Rice Dish.

Ingredients

  • 1 cup uncooked brown rice

  • 3/4 cup wild rice
    Add to Shopping List
  • 1 cup dried cherries
    Add to Shopping List
  • 1/2 cup pine nuts, toasted
    Add to Shopping List
  • 3 Tbsp Gourmet Garden Lemon Grass

  • 2 Tbsp Gourmet Garden Parsley
    Add to Shopping List
  • 3/4 cup cranberry juice
    Add to Shopping List
Method SERVES 10

Step 1
Bring 2 cups water to a boil, add brown rice, cover; reduce heat. Cook 45 minutes.  Drain any excess water.  Transfer to large bowl.

Step 2
Bring 3 cups of water to a boil, add wild rice, cover and simmer until tender about 45 minutes.  Drain and transfer to bowl with brown rice. 

Step 3
Add remaining ingredients, toss to combine.

Step 4
Transfer mixture to an ovenproof casserole; cover tightly with aluminum foil, bake at 350 degrees for 40-45 minutes or until heated through.
