Smashed Potatoes with Herbs

Smashed Potatoes with Herbs

6 medium potatoes
2 tbsp Garlic Cold Blended Paste
pinch of salt
2-3 tbsp canola oil
2 tbsp Lightly Dried Parsley

Place potatoes in large pot.  Cover with cold water.  Add garlic and pinch of salt.  Bring to a boil; reduce heat to medium; cook until fork tender, 25-30 minutes.  Remove potatoes from pot, cool to room temperature.


Cut each potato in half lengthwise and gently smash, they should look like pancakes


Heat 2 tbsp oil in a large frypan over high heat.  Add potatoes in batches, lower heat to medium, cook until a nice crust starts to form on bottom.  Turn once.   Add more oil if necessary.  Cook until golden.   Sprinkle with parsley and black pepper.
