Spicy Tomato, Chorizo, Chicken and Basil Pasta

Serves 4
25 minutes
500 grams angel hair pasta
2 tablespoons olive oil
2 skinless chicken breasts, thinly sliced
2 chorizo sausages, sliced
4 spring onions, thinly sliced
1 punnet cherry tomatoes, halved and whole
3 tablespoons red wine vinegar
1 tablespoon Garlic Cold Blended Paste
1 tablespoon Lightly Dried Chilli
2 tablespoons Lightly Dried Parsley
2 tablespoons Lightly Dried Basil
sea salt and ground black pepper, to taste
shaved parmesan, to serve

Cook the pasta to maker’s instructions, drain and rinse under cold water, drain again and toss through some olive oil. Set aside.


Heat olive oil in a large frying pan over medium heat and add spring onions, garlic and chilli. Sauté for 1 minute. 


Add chorizo and fry for a further 2 minutes before adding chicken. Seal the chicken slices before adding tomatoes. 


When the whole tomato skins begin to split, add the red wine vinegar and basil and season with sea salt and fresh ground black pepper. Fry for another minute to release the tomato juices and then add pasta and stir through.


Garnish with parsley and fresh shaved parmesan cheese.
