Chicken & Basil Pesto Fettuccine

Serves 4
30 minutes
1 lemon, juiced
2 tbsp pine nuts
1/4 cup grated Parmesan or percorino
2 tsp Basil Cold Blended Paste
2 tsp Garlic Cold Blended Paste
2 tsp Parsley Cold Blended Paste
1/3 cup olive oil
1 lb skinless boneless chicken breasts, cubed
1/2 lb Pasta

Combine lemon juice, pine nuts, Parmesan cheese, basil, garlic and parsley in a food processor and blend until roughly chopped.  With motor running add olive oil; blend until smooth.


Pan fry cubed chicken breast in olive oil; set aside.


Prepare pasta according to package directions, drain.


Combine chicken, pesto and pasta.  Mix well and top with Parmesan cheese if desired
