Turkey Breakfast Casserole with Chili Pepper & Chives

1/2 tbsp vegetable oil
1 lb Ground turkey, such as Perdue® Ground Turkey
1/2 cup onion, chopped
4 tsp Lightly Dried Chili Pepper , divided
2 tbsp Lightly Dried Chives , divided
1/2 lb shredded hash browns, frozen
1 1/2 cups Cheddar cheese, shredded, divided
8 large eggs, lightly beaten
1 cup milk
1 tsp salt

Preheat oven to 375 F. Spray an 8x8 baking dish with no stick cooking spray, set aside. 


Heat oil over medium heat in a large skillet. Add ground turkey, onions, 1 tbsp. chili pepper and 1 tbsp. chives, cook until crumbled, about 3 to 5 minutes. Drain any excess liquid. 


Combine turkey mixture, hash browns, 1 cup cheddar cheese, eggs, milk, 1 tsp. chili pepper, 1 tbsp. chives and salt in a large bowl. Pour mixture in the prepared baking dish. 


Cover with foil, bake 30 minutes. Uncover and bake an additional 20 minutes or until set. Top with remaining 1/2 cup cheese. Allow to rest 10 minutes before serving.
