Bacon & Spinach Crustless Quiche

  • 6 strips bacon, chopped
  • 1 tablespoon olive oil
  • ½ red onion, diced
  • 2 tablespoon Gourmet Garden Garlic, Stir-In Paste
  • 5 large eggs
  • 5 egg whites
  • 2 tablespoon flour
  • 1 teaspoon Gourmet Garden Dill, Stir-In Paste
  • 1 teaspoon Gourmet Garden Chili Pepper, Stir-In Paste
  • 1 cup shredded mozzarella cheese
  • 2 cups chopped baby spinach

  • Cook bacon in a large skillet over medium heat 8-10 minutes or until crispy. Remove from skillet and drain on paper towels. Wipe out skillet.

  • Add olive oil and onion to same skillet and cook for 5 minutes or until softened. Stir in Gourmet Garden Garlic Stir-In Paste and cook 1 minute. Transfer onion mixture to a large bowl.

  • Whisk eggs, egg whites, flour, Gourmet Garden Dill Stir-In Paste and Gourmet Garden Chili Pepper Stir-In Paste into onion mixture in bowl until smooth. Stir in reserved bacon, cheese and spinach. Pour into a pie plate or quiche pan coated with non stick cooking spray.

  • Bake in a preheated 350 F oven for 45 minutes or until top is golden and a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
