Penne with Garlic, Chicken, Basil and Greens

  • 1 tablespoon olive oil
  • ½ small onion, finely chopped
  • 8 ounces sliced wild mushrooms
  • 1 tablespoon Gourmet Garden Basil, Stir-In Paste
  • 1 tablespoon Gourmet Garden Garlic, Stir-In Paste
  • 1 teaspoon Gourmet Garden Chili Pepper, Stir-In Paste
  • 1 1/2 cups cooked, shredded chicken
  • 1 cup low sodium chicken broth
  • 5 ounces spinach or baby kale
  • 1 cup grape tomatoes
  • 8 ounces penne pasta
  • ¼ cup shredded parmesan cheese, optional
  • 1 tablespoon Gourmet Garden Chives, Lightly Dried,

  • Add olive oil to a large skillet over medium-high heat. Add onions and mushrooms; cook until onions are tender and mushrooms are dry. Stir in Gourmet Garden Basil Stir-In Paste, Gourmet Garden Garlic Stir-In Paste and Gourmet Garden Chili Pepper Stir-In Paste; cook 1 minute. Add chicken, broth, spinach or kale and tomatoes; bring to a boil; reduce heat. Keep warm.

  • Meanwhile cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.

  • Add cooked pasta to skillet with chicken mixture; toss well. If pasta seems dry add reserved pasta water. Serve topped with parmesan, if desired, and Gourmet Garden Lightly Dried Chives.
