Turkey Breakfast Casserole with Chili Pepper & Chives

  • ½ tablespoon vegetable oil
  • 1 lb ground turkey
  • ½ cup onion, chopped
  • 4 teaspoon Gourmet Garden Chili Pepper, Lightly Dried,
  • 2 tablespoon Gourmet Garden Chives, Lightly Dried,
  • ½ lb shredded hash browns, frozen
  • 1 ½ cups cheddar cheese, shredded, divided
  • 8 large eggs, lightly beaten
  • 1 cup milk
  • 1 teaspoon salt

  • Preheat oven to 375 F. Spray an 8x8 baking dish with no stick cooking spray, set aside.

  • Heat oil over medium heat in a large skillet. Add ground turkey, onions, 1 tbsp. chili pepper and 1 tbsp. chives, cook until crumbled, about 3 to 5 minutes. Drain any excess liquid.

  • Combine turkey mixture, hash browns, 1 cup cheddar cheese, eggs, milk, 1 tsp. Gourmet Garden Lightly Dried Chili Pepper, 1 tbsp. Gourmet Garden Lightly Dried Chives and salt in a large bowl. Pour mixture in the prepared baking dish.

  • Cover with foil, bake 30 minutes. Uncover, top with remaining 1/2 cup cheese and bake an additional 20 minutes or until set. Allow to rest 10 minutes before serving.
