Vegetable Panini with Basil

  • 1 small zucchini, cut into 10 slices, 1/2 in. thick on diagonal
  • 4 slices multi-grain bread
  • 1 tablespoon Gourmet Garden Gourmet Garden Italian Herbs Stir-In Paste, divided, Stir-In Paste,
  • 1 tomatoes, cut into 8 slices
  • 4 slices mozzerella
  • 1 cup baby spinach or arugula
  • 1 tablespoon Gourmet Garden Basil, Lightly Dried,

  • Heat Panini maker or skillet. Add zucchini slices and cook for 3-5 minutes until softened. Remove.

  • Spray Panini maker or skillet with nonstick cooking spray. Add 2 slices bread, spread with ½ Tbsp Gourmet Garden Italian Herbs Stir-In Paste then add tomato and zucchini slices, 2 slices of cheese, ½ cup greens and sprinkle with ½ Tbsp Gourmet Garden Lightly Dried Basil. Top with remaining bread slice.

  • Close Panini lid; grill for 8-10 minutes or until cheese is melted and bread is toasted.  If using a skillet; turn once after 5 minutes of cooking.

  • Repeat for second sandwich.
