Garlic Shrimp Tom Yum Detox Soup

  • 4 cups chicken broth
  • 2 tablespoon Gourmet Garden Lemongrass, Stir-In Paste
  • 2 teaspoon Gourmet Garden Chili Pepper, Stir-In Paste
  • 3 tablespoon Gourmet Garden Garlic, Stir-In Paste
  • 3 kaffir lime leaves (available fresh or frozen at Asian food stores)
  • 1 cup shitake mushrooms, stemmed and thinly sliced
  • ½ lb large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • ½ cup coconut milk (plus additional to taste)
  • 2 tablespoon fish sauce
  • 2 tablespoon Gourmet Garden Cilantro, Stir-In Paste
  • ½ small lime, juiced

  • Place chicken broth in a large saucepan and heat on medium-high. Add Gourmet Garden Lemongrass Stir-In Paste and boil 5 to 6 minutes, or until fragrant.

  • Reduce heat to low and simmer 5 minutes. Add Gourmet Garden Garlic Stir-In Paste and Gourmet Garden Chili Pepper Stir-In Paste, lime leaves, and mushrooms to broth. Simmer for another 5 minutes.

  • Add shrimp and cherry tomatoes to saucepan. Simmer 5 to 6 minutes, or until shrimp are cooked through.

  • Add coconut milk and fish sauce to saucepan. Add additional Gourmet Garden Chili Pepper Stir-In Paste, coconut milk, or fish sauce to taste.

  • Stir in Gourmet Garden Cilantro Stir-In Paste and serve in bowls.
