Minestrone Soup with Basil, Garlic & Oregano

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 teaspoon Gourmet Garden Garlic, Stir-In Paste
  • 2 tablespoon tomato paste
  • 3 cups tomato sauce
  • 2 cups vegetable stock
  • 1 medium zucchini, chopped
  • 1 stalk celery, chopped
  • 1 carrots, peeled and chopped
  • 1 small yellow squash, chopped
  • 14.5 ounces can northern beans, drained
  • ½ cup elbow macaroni
  • 1 tablespoon Gourmet Garden Oregano, Stir-In Paste
  • 1 tablespoon Gourmet Garden Basil, Stir-In Paste
  • salt and pepper, to taste

  • Heat olive oil in a large saucepan. Add onion and Gourmet Garden Garlic Stir-In Paste. Cook for 5 minutes or until softened. Add tomato paste; cook, stirring often, for 1 minute.

  • Add tomato sauce and vegetable stock and bring to a boil.

  • Add zucchini, celery, carrot, yellow squash and beans. Reduce heat to low and simmer for 15 minutes.

  • Add macaroni pasta. Simmer until pasta is tender, about 12 minutes. Add Gourmet Garden Oregano Stir-In Paste and Gourmet Garden Basil Stir-In Paste. Stir to combine. Season to taste with salt and pepper.
