Chicken with Basil and Chilli

Serves 4
25 minutes
1/4 cup vegetable oil
2 chicken breasts, halved then thinly sliced
2 tablespoons Garlic Cold Blended Paste
1 tablespoon Lightly Dried Ginger
3 teaspoons fish sauce
1/4 cup raw sugar
3 limes, juiced
180 grams snow peas
1/2 small red capsicum, sliced and cut into 1 cm strips
1 teaspoon Lightly Dried Chilli
1 handful Thai basil
black pepper, to taste

Heat the oil in a wok then add sliced chicken, garlic and ginger and sauté for approximately 4-5 minutes.


Add fish sauce, sugar and lime and cook for a further minute.


Add snow peas, capsicum, Lightly Dried Chilli and black pepper, continually tossing. Cook for further minute or two. 


Add Thai basil just before serving


Serve with steamed rice
