Curried Chicken Soup with Ginger and Garlic

Serves 4
25 minutes
2 tsp olive oil
1 small onion
1 tsp Ginger Stir-In Paste
1 tsp Roasted Garlic Stir-In Paste
200 g. chicken breast, finely diced
1 lt. chicken stock
2 tsp curry powder
100 ml cream
Salt and black pepper
sliced spring onion, to garnish

Fry chicken and onion in the oil and allow to brown slightly for a minute or two over a high heat.


Add ginger, garlic, stock and curry powder and allow to simmer over a medium heat for 15-20 minutes.


Remove from heat, add cream, season and blend until a smooth consistency.


Garnish with spring onion if desired and serve with warm bread and butter.
