Smashed Potatoes with Herbs



  • 6 potatoes
  • 2 tablespoon Gourmet Garden Garlic, Cold Blended Paste
  • 2/3 tablespoon canola oil
  • 2 tablespoon Gourmet Garden Parsley, Lightly Dried
  • pinch of salt

  • 1 Place potatoes in large pot. Cover with cold water. Add garlic and pinch of salt. Bring to a boil; reduce heat to medium; cook until fork tender, 25-30 minutes. Remove potatoes from pot, cool to room temperature.
  • 2 Cut each potato in half lengthwise and gently smash, they should look like pancakes
  • 3 Heat 2 tbsp oil in a large frypan over high heat. Add potatoes in batches, lower heat to medium, cook until a nice crust starts to form on bottom. Turn once. Add more oil if necessary. Cook until golden. Sprinkle with parsley and black pepper.
