Sun-dried Tomato and Basil Couscous

  • 1 ½ cups chicken stock, low sodium
  • 1 cup couscous, whole wheat
  • 1 tablespoon olive oil
  • ¼ cup Gourmet Garden Basil, Stir-In Paste
  • 12-Oct whole Sun-dried tomatoes, chopped coarsely
  • ¼ cup pine nuts, toasted
  • 1 tablespoon balsamic vinegar

  • Bring stock to boil. When stock boils, add the couscous and stir once. Remove from heat; cover and let stand for 5 minutes.

  • In a bowl, mix the olive oil, salt, Gourmet Garden Basil Stir-In Paste and tomatoes. With two forks gently fluff couscous, combining with tomato mixture. Add the pine nuts and gently toss once more.

  • Serve garnished with a few splashes of balsamic vinegar.
