Preheat your oven to 180 degrees fan forced and line a large tray with baking paper.
Cut the potatoes into fries shapes and place into a large bowl of cold water for at least 1 hour. Drain and dry on a clean cloth or paper towel.
Toss the potatoes with olive oil, garlic paste, chilli paste and 1 tablespoon of lightly dried parsley. Evenly spread out on the baking tray and bake for 45-50 minutes or until golden and crispy.
Serve with crumbled feta cheese on top and extra lightly dried parsley. Enjoy!
