  • 500 g beef mince
  • 1 tbsp Gourmet Garden Garlic , Cold Blended Paste
  • 2 tbsp Gourmet Garden Lightly Dried Coriander
  • 1 tbsp tomato paste
  • 2 tbsp taco seasoning*
  • 1 x 400 g tin diced tomatoes
  • 1½ cups beef stock
  • 1 cup tomato passata
  • 1 x 400 g can red kidney beans, drained and rinsed
  • 1 x 400 g can black beans, drained and rinsed
  • 1 x 400 g can corn, drained
  • Optional toppings
  • Sour cream, grated cheese, avocado, more Gourmet Garden Lightly Dried Coriander
  • Homemade Taco Seasoning
  • ½ tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 2 tsps cumin
  • 1 tsp oregano
  • 1 tsp sugar
  • Salt and pepper, to taste

Preparation

  • 1 In a large pot over medium heat, cook beef mince until browned.
  • 2 Add Gourmet Garden Garlic Paste and cook until fragrant. Stir in tomato paste, taco seasoning, and Gourmet Garden Lightly Dried Coriander. Cook for 1–2 minutes.
  • 3 Add diced tomatoes, beef stock, passata, beans, and corn. Stir well to combine.
  • 4 Cover and simmer gently for 20 minutes, stirring occasionally.
  • 5 Serve hot with your favourite toppings such as sour cream, grated cheese, avocado, and Gourmet Garden Lightly Dried Coriander.
