Cilantro Corn Muffin

  • 1 cup (250 ml) flour
  • 1 cup (250 ml) yellow cornmeal
  • 2 tsp (10 ml) baking powder
  • 1/2 tsp (2 ml) baking soda
  • 1 cup (250 ml) nonfat plain Greek yogurt
  • 1/2 cup (125 ml) skim milk
  • 1/4 cup (60 ml) butter, melted, cooled
  • 1 tbsp (15 ml) Gourmet Garden Cilantro, Stir-In Paste
  • 2 eggs
  • 2 green onions, chopped
  • 1/4 cup (60 ml) sugar

Preparation

  • Combine flour, cornmeal, sugar, baking powder and baking soda in a bowl.

  • Whisk yogurt, milk, butter and Gourmet Garden Cilantro in a bowl. Stir in eggs and green onions.

  • Stir yogurt mixture into dry ingredients just until moistened. Do not overmix. Divide batter evenly into 12 muffin cups. Bake at 425�F (220�C) for 20 min. or until golden. Tip: You can substitute white cornmeal for yellow in this recipe. Tip: Use corn muffin mix and simply stir in Gourmet Garden Cilantro and green onion before baking.
