  • 1/4 cup fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons Gourmet Garden™ Ginger
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 ripe mangoes, peeled, seeded and chopped
  • 2 medium sweet onions, peeled and chopped
  • 3 tablespoons finely chopped fresh mint
  • 2 pounds skin-on salmon fillets
  • Lime wedges, optional

Preparation

  • Mix lime juice, lemon juice, Ginger Paste, olive oil and honey in small bowl until well blended. Stir in mango and onion to coat. Cover and refrigerate at least 1 hour or until ready to serve.

  • Preheat grill for indirect medium heat. Grill salmon, skin-side down, over indirect heat 16 to 18 minutes or until fish flakes easily with a fork.

  • Stir mint into mango salsa. Spoon salsa over salmon to serve.
