  • 1 Make the basil pesto by blending the pesto ingredients until smooth.
  • 2 Cook the bacon and set aside to cool before dicing into small pieces.
  • 3 Meanwhile, mix together in a small bowl the tomato, avocado and red onion.
  • 4 Add the bacon to the tomato mixture and mix in 1 tablespoon of pesto. Serve on a piece of your favourite toasted bread and enjoy.
