- 1 medium tomato, chopped
- ¼ red onion, finely diced
- ¼ avocado, diced
- 2 slices bacon, cooked and diced
- small handful feta cheese, crumbled
- 2 slices bread of your choice
- Homemade Pesto
- 1 packet Gourmet Garden Lightly Dried Basil , Lightly Dried
- ½ cup extra virgin olive oil
- ¼ cup pine nuts
- ½ cup parmesan cheese
- 2 tsp Gourmet Garden Garlic , Cold Blended Paste
- juice of half a lemon

- 1 Make the basil pesto by blending the pesto ingredients until smooth.
- 2 Cook the bacon and set aside to cool before dicing into small pieces.
- 3 Meanwhile, mix together in a small bowl the tomato, avocado and red onion.
- 4 Add the bacon to the tomato mixture and mix in 1 tablespoon of pesto. Serve on a piece of your favourite toasted bread and enjoy.
