Ingredients
- 1 tbsp oil from sundried tomato jar
- 500 g diced chicken breast
- 1 tbsp smoked paprika
- 1 tsp thyme
- 1 tsp Gourmet Garden Lightly Dried Oregano
- Salt and pepper, to taste
- 1 tbsp Gourmet Garden Garlic , Cold Blended Paste
- ½ cup sundried tomatoes
- ½ cup mixed olives, halved
- 1 tbsp tomato paste
- 1 cup risoni
- 2½ cups chicken broth or stock
- 2 tbsp light cream cheese
- 2 tbsp Gourmet Garden Lightly Dried Basil
- 2 large handfuls baby spinach

Preparation
- 1 In a large saucepan, heat sundried tomato oil over medium heat. Add diced chicken and season with smoked paprika, thyme, oregano, salt and pepper. Cook until browned.
- 2 Add Gourmet Garden Garlic Paste, sundried tomatoes, and olives. Stir to combine.
- 3 Add risoni and chicken stock. Cover with lid and simmer for 12–15 minutes, stirring every 5 minutes to prevent sticking.
- 4 Stir through tomato paste and cream cheese until melted and combined.
- 5 Turn off heat. Add Gourmet Garden Lightly Dried Basil and baby spinach. Stir until spinach is wilted and everything is well combined.
