  • 4 chicken breast fillets
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 red onion, thinly sliced
  • 2 tsp Gourmet Garden Garlic , Cold Blended Paste
  • 2 tbsp tomato paste
  • ½ cup sundried tomatoes, drained and chopped
  • ⅔ cup (160 mL) thickened cream
  • 3 tbsps Gourmet Garden Lightly Dried Basil
  • 2 tbsp Shaved parmesan, to garnish
  • To Serve
  • Steamed broccolini
  • Brown rice
  • Lemon wedges

Preparation

  • 1 Season chicken all over. Heat olive oil in a large frying pan over medium-high heat. Cook chicken until golden on both sides (about 3–4 minutes per side), or until cooked through. In the last 30 seconds, add butter and baste the chicken. Transfer to a plate, cover loosely and keep warm.
  • 2 Reduce heat to medium. Add onion and garlic paste to the pan and cook for 5 minutes, stirring until softened. Stir in tomato paste and cook for 2 minutes. Add chopped sundried tomatoes, cream and half the lightly dried basil. Bring to a simmer and cook for 5–7 minutes, until the sauce thickens and reduces by half.
  • 3 Return chicken and any resting juices to the pan. Spoon sauce over each piece to coat well.
  • 4 Sprinkle with shaved parmesan and remaining lightly dried basil. Serve immediately with broccolini, brown rice and lemon wedges.
