What Is Pancetta?

Pancetta is a delectable Italian specialty made from pork belly meat that is cured with salt. It can be enjoyed both uncooked and cooked in a number of different dishes – think charcuterie boards, pastas, pizzas, soups and more!

With its strong pork taste and high salt level, pancetta is similar to bacon but without the smokiness. This makes it an excellent choice for recipes where you want to enjoy the full flavour of cured pork without the additional smoky notes.

 

What's The Difference Between Pancetta, Bacon & Prosciutto?

While pancetta, bacon, and prosciutto are all types of cured pork, they each have unique characteristics that set them apart.

  • Pancetta is made from pork belly and is cured with salt and seasoned with spices and other ingredients. With a fatty, silky texture, Pancetta can be eaten both cooked and uncooked.
  • Bacon is also made from pork belly, but can be both cured and smoked. It is the most well-known cut of pork meat, and often used in breakfast meals, pizzas and pastas.
  • Prosciutto is made from the hind legs of a pig. It is dry-cured and has a thick, buttery, and smooth texture. As it is typically cut into thin slices, prosciutto is usually served raw and is a common component of charcuterie boards and salads.

  • 1 large store bought or homemade pizza base
  • ¼-⅓ cup tomato paste
  • 1 x 5 g packGourmet Garden Lightly Dried Oregano , Lightly Dried
  • 220 g torn fresh or grated mozzarella cheese
  • ½ red onion, thinly sliced
  • 1 x 100 g pack sliced prosciutto

Preparation

  • 1 Preheat your oven to 220°C. If you’re using a pizza stone, place it in the oven to heat up. This will help achieve a crispy crust.
  • 2 If using store-bought pizza dough, follow the package instructions for preparation. Transfer the dough to a baking sheet lined with parchment paper or a pizza peel if using a pizza stone.
  • 3 Spread the tomato sauce evenly over the pizza base, leaving a small border around the edges for the crust. This will give your pizza a classic look and prevent the sauce from spilling over.
  • 4 Sprinkle ½ of Lightly Dried Oregano pack over base. Sprinkle half the shredded mozzarella cheese evenly over the base. Arrange the onion and pancetta or prosciutto over the cheese. Try to distribute the pancetta evenly so every bite gets a bit of every topping. Finaly, top off with the remaining cheese.
  • 5 Transfer the pizza to the preheated oven and bake for 10-15 minutes, or until the crust is golden and crispy, the cheese is melted and bubbly. Keep an eye on the pizza to avoid burning, especially if your oven runs hot. Remove the pizza from the oven and let it cool for a minute or two. This brief rest allows the cheese to set slightly, making it easier to cut. Garnish with the remaining Lightly Dried Oregano and slice the pizza into wedges using a pizza cutter or a sharp knife. Serve hot and enjoy!
