Pan-fried Salmon with Parsley

  • 2 x salmon fillets
  • 1 tbsp Gourmet Garden Lightly Dried Parsley , Lightly Dried,
  • 2 tbsp olive oil
  • cooked rice and salad, to serve

  • 1 Place salmon fillets in a bowl. In a small jug, whisk Lightly Dried Parsley with olive oil. Pour marinade over salmon and refrigerate for 10 minutes.
  • 2 Heat a lightly greased pan over medium heat. Place salmon fillets skin side down in pan, reserving the marinade. Cook for 4 minutes on one side, basting frequently with marinade. Turn and cook for a further 3 minutes, continuing to baste the fish until it is glazed, almost caramelised and cooked to your liking.
  • 3 Serve salmon with rice, salad and a sprinkle of Lightly Dried Parsley.
