Chicken Meatballs with Italian Herbs & Chives

  • 1 Preheat oven to 350 degrees.  Line a baking sheet with parchment paper or spray a small muffin pan with non-stick cooking spray.
  • 2 Mix all ingredients together in a large bowl. Roll into 36-40 meatballs, about the size of a golf ball.
  • 3 Transfer all the meatballs to the baking sheet or mini muffin pans. Bake for 10-12 minutes or until internal temperature reaches 165F degrees.  Let meatballs rest for 5 minutes.
  • 4 Serve with your favorite marinara sauce.
