Refried Black Beans with Cilantro, Garlic and Chili Pepper

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 small yellow bell pepper, finely chopped
  • 2 tablespoon Gourmet Garden Cilantro, Stir-In Paste
  • 1 tbsp.Gourmet Garden Garlic, Stir-In Paste
  • 1 tablespoon Gourmet Garden Chili Pepper, Stir-In Paste
  • 15 ounces black beans, rinsed and drained
  • ½ cup low sodium, fat free chicken broth

  • Add olive oil to a medium nonstick skillet over medium-high heat. Add onion and bell pepper; cook 7-9 minutes or until softened. Add Gourmet Garden Cilantro Stir-In Paste, Gourmet Garden Garlic Stir-In Paste, Gourmet Garden Chili Pepper Stir-In Paste, black beans and broth to pan and cook 2 minutes or until warmed through.

  • In a blender or food processor, pulse black bean mixture until blended but still slightly chunky.

  • Add blended black beans back to the sauté pan over medium heat. Simmer for 5 more minutes, stirring frequently.
