Coconut and Lemongrass Popsicles

Preparation

  • 1 Put lemongrass, ginger, sugar, lime juice and water in a pot and stir over low heat until sugar dissolves.
  • 2 Bring to the boil and then turn down and simmer for 5-10 minutes until sightly thickened.
  • 3 Take off heat and add coconut water to bring down the temperature of the syrup.
  • 4 In a blender blend the mango and coconut cream, then add the syrup and blend until mixed
  • 5 Pour into mould and freeze until set. Makes 4-6 popsicles depending on size
