  • 15 ounces canned corn
  • 15 ounces black beans, rinsed and drained
  • 1 jalapeño pepper, seeded, finely chopped
  • 1 large red pepper, seeded and chopped
  • 3 tablespoon Gourmet Garden Cilantro, Lightly Dried
  • 1 tablespoon Gourmet Garden Garlic, Stir-In Paste
  • 1 avocado, seeded, peeled and chopped
  • 2 cups baby spinach, finely chopped
  • 1 small lime, juiced
  • 3 tablespoon olive oil

Preparation

  • Combine corn, black beans, jalapeno and red pepper in large bowl.

  • Stir in Gourmet Garden Lightly Dried Cilantro and Gourmet Garden Garlic Stir-In Paste.

  • Add spinach and avocado. Toss with lime juice and olive oil. Serve.
