Gingered Carrot & Leek Soup

  • 2 tablespoon olive oil
  • 3 medium carrots, trimmed, peeled, and chopped
  • 2 medium leeks, trimmed, white parts chopped, rinsed well
  • 1 tablespoon Gourmet Garden Ginger, Stir-In Paste
  • 2 teaspoon Gourmet Garden Garlic, Stir-In Paste
  • 4 cups chicken broth
  • ½ cup water
  • Greek yogurt, if desired

  • Heat oil in a large saucepan over medium heat. Add carrots and leeks and cook for 15 minutes, stirring often, or until veggies are softened.

  • Add Gourmet Garden Ginger Stir-In Paste and Gourmet Garden Garlic Stir-In Paste and cook for 1 minute or until fragrant.

  • Add chicken broth and bring to a boil. Reduce heat to low and simmer 15 minutes or until vegetables are tender. Blend soup until smooth.

  • Add ½ cup water and return to a simmer. Serve soup in bowls topped with Greek yogurt, if desired.
