- 1 Heat oil in a large saucepan over medium heat. Add carrots and leeks and cook for 15 minutes, stirring often, or until veggies are softened.
- 2 Add Gourmet Garden Ginger Stir-In Paste and Gourmet Garden Garlic Stir-In Paste and cook for 1 minute or until fragrant.
- 3 Add chicken broth and bring to a boil. Reduce heat to low and simmer 15 minutes or until vegetables are tender. Blend soup until smooth.
- 4 Add ½ cup water and return to a simmer. Serve soup in bowls topped with Greek yogurt, if desired.
