  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 teaspoons Gourmet Garden™ Garlic Stir-In Paste
  • 2 tablespoons tomato paste
  • 3 cups tomato sauce
  • 2 cups vegetable stock
  • 1 medium zucchini, chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, peeled and chopped
  • 1 small yellow squash, chopped
  • 1 can (14 1/2 ounces) great northern beans, drained
  • 1/2 cup elbow macaroni
  • 2 tablespoons Gourmet Garden™ Lightly Dried Italian Herbs
  • Salt & Pepper, to taste

Preparation

  • 1 Heat olive oil in large saucepan. Add onion and Garlic Paste; cook and stir 5 minutes or until onion is softened. Add tomato paste; cook 1 minute, stirring often.
  • 2 Add tomato sauce and stock; bring to a boil. Add vegetables and beans. Reduce heat to low and simmer 15 minutes.
  • 3 Add macaroni. Simmer 12 minutes or until pasta is tender. Stir in Italian Herb Paste and season with salt and pepper, if desired, to serve.
