Chorizo & Capsicum Penne with Roasted Garlic & Oregano

600 g penne pasta
1/2 red onion, sliced
2 chorizo sausages, sliced
1 red capsicum, sliced
200 g cherry tomatoes
2 tbsp Garlic Stir-In Paste
1 tbsp Lightly Dried Oregano
1 tbsp Lightly Dried Parsley
400 g can diced tomatoes
2 cups chicken stock
50 g. shaved parmesan

Bring a large pot of well salted water to the boil and cook the pasta as directed on the pack.


Heat 2 tablespoons olive oil in a large frying pan and add the sliced onion, chorizo, capsicum. Sauté for about 4 minutes.


Add garlic, oregano, parsley and fresh and cooked tomatoes and sauté for 2-3 minutes. Pour in the stock, bring to the boil, reduce heat and simmer for 5 minutes.


Drain the pasta and toss through the sauce, season with pepper and salt, as needed. Serve into pasta bowls and and finish with Parmesan.
