  • 1 lemon, juiced
  • 2 tablespoon pine nuts
  • 1/4 cup Parmesan or percorino, grated
  • 2 teaspoon Gourmet Garden Basil, Stir-In Paste
  • 2 teaspoon Gourmet Garden Garlic, Stir-In Paste
  • 2 teaspoon Gourmet Garden Parsley, Stir-In Paste
  • 1/3 cup olive oil
  • 1 lb skinless boneless chicken breasts, cubed
  • ½ lb pasta

  • Combine lemon juice, pine nuts, Parmesan cheese, Gourmet Garden Basil Stir-In Paste, Gourmet Garden Garlic Stir-In Paste and Gourmet Garden Parsley Stir-In Paste in a food processor and blend until roughly chopped. With motor running add olive oil; blend until smooth.

  • Pan fry cubed chicken breast in olive oil; set aside.

  • Prepare pasta according to package directions, drain.

  • Combine chicken, pesto and pasta.  Mix well and top with Parmesan cheese if desired
