Heat oven to 450 degrees.
Turn whole chicken breast side down on cutting board. Using kitchen shears, cut along both sides of the backbone and remove it from the chicken. Turn the chicken over and place it on a prepared baking sheet. Press down on breast to flatten out.
Rub the chicken with oil, sprinkle evenly with Gourmet Garden Lightly Dried Parsley, Gourmet Garden Lightly Dried Basil, Gourmet Garden Lightly Dried Cilantro, salt and pepper. Roast in oven for 40-45 minutes or until cooked through (internal temperature reaches 165F in thigh).
Remove from oven and let rest for 10 minutes before carving.
