  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 large red bell pepper, seeded and chopped
  • 3 tablespoons Gourmet Garden™ Lightly Dried Cilantro
  • 1 tablespoon Gourmet Garden™ Garlic Stir-In Paste
  • 2 cups baby spinach, chopped
  • 1 medium avocado, peeled, seeded and chopped
  • 1 small lime, juiced
  • 3 tablespoon olive oil

Preparation

  • Mix black beans, corn, bell pepper and jalapeño in large bowl. Stir in Lightly Dried Cilantro and Garlic Paste.

  • Add spinach and avocado. Toss with lime juice and olive oil. Serve immediately.
