  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium carrot, peeled & chopped
  • 1 celery stalk, chopped
  • 1 red bell pepper, seeded & chopped
  • 1 cup lentils
  • 2 tablespoon Gourmet Garden Garlic, Stir-In Paste
  • 2 tablespoon Gourmet Garden Cilantro, Stir-In Paste
  • 1 tablespoon Gourmet Garden Parsley, Stir-In Paste
  • ½ teaspoon salt
  • 2 quarts low sodium vegetable broth

Preparation

  • Heat oil in stock pot over medium high heat. Add onion, carrot, celery and red bell pepper; cook until vegetables have softened, about 8 minutes.

  • Add lentils, Gourmet Garden Garlic Stir-In Paste, Gourmet Garden Cilantro Stir-In Paste, Gourmet Garden Parsley Stir-In Paste, and salt. Cook 1 minute, stirring constantly.

  • Add vegetable broth. Bring to a boil; reduce heat to low and simmer for 25 minutes, stirring occasionally or until lentils are tender.
